Spring Onion 
As a vegetable, onion is consumed raw, stewed or fried. It is used as a condiment, in soups and stews. Small mature bulbs are pickled in vinegar and some species are commercially cultivated for this purpose. Spring onions represent the early growth of onions and are used in salads and for flavouring. Onions contain a little starch, an appreciable amount of sugar, a little protein and vitamins A, B and C.

Storing: 
They store well in cool, dry places and make good winter vegetables in cold climates.
